Products

Mead is the worlds oldest fermented beverage. It is produced by mixing Honey, Yeast and Water.  Mead can also use a wide variety of ingredients including fruits and spices.

 

We are always experimenting with flavor combinations. Below is a list of some of our current offerings.

Core Products

New York Nectar

uses Upstate New York honey to create this traditional mead. This traditional mead allows the natural flavors of the honey to show. This showcases the  raw, unheated honey that we use in this product. By not heating the honey, we are able to preserve the delicate honey aromas.

Royal Meadery Apple Pie

Combines New York apple cider and New York honey to make a unique beverage. To give this cyser  its signature flavor, we mix it with the finest apple pie spices and whole vanilla beans.

 

Mumford's Melomel

Combines local honey with black currants, blueberries, blackberries and raspberries to make a product full of flavor. While sipping this melomel you will notice the jammy flavor which is followed up with a tartness from the black currants.

The Queens

uses a blend of several honeys to make a unique traditional mead.  The most prominent flavor in this mead is buckwheat.  The malty, molasses flavor of the buckwheat, combined with the delicate flavor of the wildflower give this mead a pleasant, full bodied taste.

New York Nectar - Ginger

uses Upstate New York honey and a blend of ginger to create this crisp and refreshing mead. This product is great for a hot day, or for mixing in your favorite cocktail.

Bee Line (Seasonal and Special Releases)

Cherry

combines wildflower honey with a blend of cherries. The balance of the acidity of cherries and the sweetness of the honey makes for a great mead. Consider mixing this mead into a cocktail or mixing with your favorite soda or cola.

Cranberry Orange

combines orange blossom honey with cranberries and orange peel to create a refreshing, slightly tart mead. There is a slight citrus flavor to this mead from the orange blossom honey and the orange peel. This mead pairs well with any meal or on its own.

Orange Blossom

uses orange blossom honey to produce a light, crisp, citrusy mead.  Orange blossom honey provides unique flavor contributions to the mead. Try this side by side with our traditional mead to compare the differences between the two honey varieties.

Raspberry

combines wildflower honey with a blend of raspberries. This mead has a nice residual sweetness from the raspberries picked at peak ripeness along with the local wildflower honey.

Spiced Pear

Combines wildflower honey with pear juice. An addition of cinnamon and vanilla is added during aging to give this a nice spiced flavor. The gentle flavors of the pears with the addition of spices make for a nice after dinner drink.

Barrel Aged The Queens

uses a blend of several honeys to make a unique traditional mead.  The most prominent flavor in this mead is buckwheat.  The malty, molasses flavor of the buckwheat, combined with the delicate flavor of the wildflower gives this mead a pleasant, full bodied taste. To round out this product we age it in barrels for six months.

Midnight Melomel

combines four fruits to create this tart mead. By adding additional black currants, we are able to create this tart but refreshing mead. The extra fruit gives this mead additional body, flavor and complexity.
